- Put a pot of water on to boil pasta After boiling starts, add enough salt to water to make it taste salty, like the sea, add pasta and cook until desired doneness.
- In the meantime, put oil in pan and heat up, then add in all the veg, toss to coat in oil and stir-fry gently for about 5 minutes
- Add in wine, stir and cover for another 3 minutes.
- Add in salt and pepper to taste. Toss gently.
- Drain and add pasta to pan and toss to coat well.
- Serve with fresh shave parmagiana cheese or serve plain, with fresh slices of crusty bread. Enjoy!!
- Can also be served cooled as a fresh salad
