  1. Take 100 grams Pork belly, thinly sliced
  2. Take 1 small piece Ginger
  3. Prepare 100 grams Daikon radish
  4. Prepare 200 grams Japanese vegetable mix (lotus roots, bamboo shoots. burdock root, carrot, shitake mushrooms and green beans)
  5. Prepare 1/2 Japanese leek
  6. Get 3 heaped tablespoons Miso with dashi stock
  7. Prepare 1 Sugar
  8. Get 1 Sesame oil

Packed with an excellent source of vitamins, it's absolutely nourishing and soul-fulfilling! Besides pork, the characteristic of this soup is that it is loaded with hearty root vegetables such as gobo (burdock root), taro, daikon, and carrot. I've told you guys before about my tonjiru (豚汁) before, with big chunks of pork belly and vegetables, it's more like a hearty pork and miso stew than a soup. Take your favorite vegetables, add miso, and you've got a flavorful soup.

Instructions to make Hearty Pork Miso Soup:
  1. Cut the pork into 2 - 3 cm lengths. Slice the ginger thinly. Defrost the Japanese-style vegetable mix and cut roughly. Cut the daikon radish roughly. Cut the konnyaku by hand roughly. Slice the Japanese leek.
  2. Fry the pork with the ginger and sesame oil.
  3. Add the daikon, konnyaku and 600 ml of water. Bring to the boil and skim off the scum. Cook over a medium heat for about 10 minutes.
  4. Add the miso.
  5. Add all the ingredients apart from the Japanese leek and simmer for about 10 minutes.
  6. Add the Japanese leek at the end. Add some sugar, bring to the boil quickly and it's done.

The vegetables are packed with umami, so you don't need any dashi or broth. In a large soup pot over medium heat add the scallion white parts, ginger, garlic, and sesame oil. Remove the kombu and set it aside. Cozy up and enjoy this hearty pork belly miso soup with loads of vegetables and a bit of spicy kick from yuzu kosho (Japanese citrus pepper paste)!
