You can use vegetable broth instead of the water or other liquids like soy sauce, tamari, wine, vinegar, etc. to cook the veggies. Begin by washing the lentils and then putting into a pan with the stock, tomatoes, green pepper and bay leaf. The lentils are deliciously spiced and smoky, with fresh tangy mozzarella and creamy avocado to top it off. Place the lentils in a large saucepan. Add the stock or water, bay leaves and parsley.
