The ingredients needed to make Minestrone:
  1. Get ground beef
  2. Prepare water
  3. Prepare canned tomatoes, undrained
  4. Make ready sliced carrots
  5. Make ready salt
  6. Prepare worcestershire sauce
  7. Take black pepper
  8. Get Bay leaves
  9. Take canned red kidney beans, drained
  10. Take shredded cabbage
  11. Take macaroni, can use gluten-free pasta. I used corn pasta
  12. Prepare grated parmesan cheese for sprinkling on top
Steps to make Minestrone:
  1. In a Dutch oven or stockpot, brown meat over medium high heat. Drain. Return to pot.
  2. Add water, undrained tomatoes, carrots, salt, worcestershire sauce, pepper, & Bay leaves. Bring to a boil. Reduce heat.
  3. Simmer, covered, stirring occasionally, for about 1 hour.
  4. Add drained beans, cabbage, & macaroni. Can add less macaroni if you want a thinner soup. Mix well. Cover. Simmer, stirring occasionally, for 30 minutes.
  5. Discard Bay leaves. Ladle into soup bowls. Sprinkle with parmesan. Serve with crackers or bread, if desired.
