Pav Bhaji is one of my favorite Indian dishes. It's loaded with veggies, healthy, vegan, gluten-free, and of course, flavor. This easy-to-make Pav Bhaji Masala recipe consists of a thick vegetable curry served with grilled bread, and is a great meal for the entire family! Unfortunately, it doesn't taste like onion bhajis but it's tasty.

Steps to make Vegan Bread Bhaji:
  1. Make a purée of chopped onions, tomato & green chillies. Add that to a heavy bottomed pan with 2tsp gingely oil.
  2. Add the green peas and boiled potato to the pan. Mix well.
  3. In a pressure cooker cook the cauliflower & carrots for 3 whistles. Mash well once cooked. Add to the pan with the rest of the veggies.
  4. Add the salt, turmeric, red chilli powder. Mix well. Let it cook for 2 mins on low flame.
  5. Add the ginger & garlic powder.
  6. Pour water just enough to cover all veggies. Cover & cook on medium flame for 5-7 mins or until raw smell of chilli powder disappears.
  7. Add the garam masala or pav bhaji masala in the end and mix well cooking for another 2 mins on low flame. Mash all the veggies well.
  8. Garnish with plenty of chopped coriander
  9. Cut bread slices into triangles and fry on medium flame with little gingely oil, until both sides brown.
  10. Serve with lime and raw chopped onions for garnish. They help in digestion and adds to the flavour of the whole dish.
