- Slice the other half of the onion, rinse the Locust beans. Heat red oil in pot, don't allow it to be smokey, add onion and Locust beans. Allow it fry a bit then add grated pepper mixture. Add water, pomo and pinch of salt in another pot, let it boil for a while, it gives the pomo a nice taste, u can add seasoning if u want
- Let the stew cook well for over 30mins till the water in it dries out. Add fish, pomo seasoning and salt, stir and leave to cook for 7 mins. Food is ready. Serve with rice, yam or anything of your choice
- Served mine with white rice and fried diced plantain
