Instructions to make Rough stew:
  1. Grate the pepper, tomatoes and half onions, remove the bone of the fish, wash pomo dice and set aside
  2. Slice the other half of the onion, rinse the Locust beans. Heat red oil in pot, don't allow it to be smokey, add onion and Locust beans. Allow it fry a bit then add grated pepper mixture. Add water, pomo and pinch of salt in another pot, let it boil for a while, it gives the pomo a nice taste, u can add seasoning if u want
  3. Let the stew cook well for over 30mins till the water in it dries out. Add fish, pomo seasoning and salt, stir and leave to cook for 7 mins. Food is ready. Serve with rice, yam or anything of your choice
  4. Served mine with white rice and fried diced plantain
