- Pour the mixture into a bowl, add the plantain flour gradually mixing eith warm water…. - It must.not be watery….
- When the mixture is right.. - Add salt, smokd fsh, crayfish and season.cube (1 shlould do) - Pour in about 2 cooking spoonful of oil and mix well.. - I add anout 1/2 a tsp of black pepper.for that special flavour.
- Oil you foil packs very well - Then pour the right amount of the plantain mixture into it and place - inside a pot with boiling water
- Cover with a foil paper to prevent it loosing the steams and allow to cook for 20mins… - Once it set and the surface is dry…know that your Plantain Pudding is ready…
- You can serve this Pkantain pudding with Ogi, custard or oats… - The colour is usually.dark, but am guessing since I dried and made my Unriped Plantatin flour myself, it came out light yellow… - Also because it wasn't cooked with palm oil and in moin moin leaves, the colour is so.lovely.
