- Take a small pan, heat oil on a medium flame. Now add Urad dal, mustard seeds, curry leaves and cashews and saute for a minute.
- After 15 minutes, add some more water to make an idli batter consistency. Add the tempering to the batter. Mix everything nicely.
- Take an Idli Cooker, pour some water and bring it to boil. Now grease the idli plate/mould with some oil.
- Just before pouring the batter in the idli plate/mould, add 1 tsp of eno add stir continuously to get a frothy texture. Now pour the batter in Idli plate and let it steam for 15 mins.
- After 15 minutes check if the Idlis are done by inserting a toothpick. Of it comes out clean Idlis are cooked. Let it cool for 2-3 minutes and now demould the Idlis.
- Remove the idli in a plate and serve with coconut chutney or green chutney.
