- Get 2 nos. /155 gms Tomatoes
- Make ready 1 nos. /155 gms Orange
- Make ready 55 gms Jaggery (or sugar)
- Prepare 10 gms Raisins
- Make ready 50 gms Dates(seedless preferred)
- Make ready 20 gms tamarind + 100 gms warm water
- Take 1/2 tsp Panchforon (refer to aloo dum recipe, reference given) (see recipe)
- Take 1 whole dry red chilli
- Take 1/2 tsp Chilli flakes
- Take 1/2 tsp Kashmiri Lal mirch powder
- Take 1 tbsp mustard oil
- Make ready as per taste Salt
- Get 1/2 tsp dry roasted Cummin and coriander powder
- Take 1/2 tsp ginger powder
- Prepare 1 pinch black rock salt
Cook, stirring frequently, on low heat till sugar melts. Increase heat to high and continue to cook, until chutney reaches consistency of thick jam. Sweet & spicy tomato chutney is the perfect accompaniment to Indian meals. However in case you can't handle all the heat from garam masala and the chili powder, please reduce the quantity of both.
Instructions to make Sweet and sour Tomato and orange chutney:
- First, soak the tamarind for at least an hour in warm water, once soaked, mix it with a hand and strain it. Soak the dates and raisins too. Dry roast some whole Cumin and coriander seeds and grind them into powder.
- Wash and chop the tomatoes, with the help of zester or zest peeler, zest the orange and separate the fruits from the pith and discard the seeds (if any).
- In a frying pan heat mustard oil and pinch & add whole dry red chilli and Paanch Foran. Once it crackes add the chopped tomatoes, stir it for one or two minutes
- Add Kashmiri Lal mirch powder, Turmeric powder, black rock salt and salt as per taste and mix well.Add about 1/2 cup water cover and cook for about 5 minutes.
- Then add ginger powder, raisins and dates along with the soaked water (about 1/2 cup) orange zest and mix well and cook for about 3-5 minutes.
- Add chilli flakes and the strained tamarind pulp and cook for another 3 mins or so. Add little water if required.
- Then add the jaggery and mix well and cook for about 3 minutes or so and then add the prepared orange fruit and mix well gently. Cook for about 5 minutes. At the end sprinkle the roasted Cummin and coriander powder & mix well. Your chutney is ready. Bon Appetit!!!!
