Steps to make Chicken Zeera Fried Rice:
- In a pan, heat oil, then add the onions and minced ginger garlic and saute for a minute. Once it's done, add in all the veggies, green chillies, chicken, plus all the spices and stir fry for a while. Then cover with a lid and let it simmer on a low heat for 20-22 minutes. Veggies can be excluded totally.
- Meanwhile, in a cooking pot, add Oil. To this, add in the cumin seeds and bay leaves, you can also add other whole masalas such as cinnamon, black peppercorns
- For this you can either use freshly cooked Rice or leftovers. If making fresh Rice, do it accordingly. Add this Rice to the cooked Chicken and give it all a good mix but very gently. Garnish with Coriander and Mint Leaves chopped. Simmer for at least 15 more minutes.
