Mixed fried rice is one of the most favored of recent trending foods on earth. It is appreciated by millions daily. It is simple, it is quick, it tastes yummy. Mixed fried rice is something which I have loved my whole life. They are fine and they look fantastic.
To get started with this particular recipe, we have to first prepare a few ingredients. You can cook mixed fried rice using 17 ingredients and 12 steps. Here is how you can achieve it.
The ingredients needed to make Mixed fried rice:
- Take 2 cups basmati rice
- Get 3 cup water
- Make ready 250 gm boneless chicken cut into cubes
- Take 2 carrots chopped
- Take 1 capsicum chopped in small cubes
- Get 4 spring onions(white part and green part chopped separately)
- Get 3 eggs
- Make ready 2 tbsp milk
- Prepare 1 pinch turmeric powder
- Make ready 1 tbsp green chilli sauce
- Prepare 2 tbsp soya sauce
- Take 1 tbsp salt
- Prepare 1 tbsp white pepper powder
- Get 2 tbsp vinegar
- Get 1 tbsp black pepper powder
- Take 1.5 tsp ginger garlic paste
- Get 6-8 tbsp oil
Instructions to make Mixed fried rice:
- Wash rice properly. Take a pressure cooker and add washed rice to it with 3 cups water(take rice and water in the ratio 1:1.5). Since we are using 2 cups rice so we need 3 cups water. Cover the lid of pressure cooker and give two whistles on high flame. Switch off the flame and let it cool down. Open the lid. Rice is ready.
- Wash chicken. Add 1/3 tsp black pepper powder and salt to the chicken and mix well. Keep aside and let it marinate for 10 mins.
- Take a bowl and add eggs, milk, turmeric and little salt in it. Blend it well.
- Take a pan and add 2tbsp oil. Add marinated chicken to it. Saute on high flame for 2 mins. Then cover the lid and cook for 5 mins on low flame. Turn off the gas and take it out in a bowl or plate and keep it aside.
- Heat 1 tbsp oil in the pan. Add beaten egg and scramble it nicely.
- Heat another pan and add 4-5 tbsp oil. Add ginger garlic paste. Saute till raw smell goes. Add white part of the spring onion and saute for a minute or two.
- Add all chopped vegetables except green part of the spring onion. Fry for 2-3 minutes. Remember vegetables should be crunchy, as overcooked vegetables doesn’t go well in fried rice.
- Add salt, black pepper, white pepper and green chilli sauce. Mix together nicely.
- Now add scrambled eggs to it. Then add chicken. Saute for 2 mins.
- Now add rice little by little in parts and keep mixing. Similarly add all the rice and mix well. Now sprinkle little white pepper and black pepper on top. Add vinegar and mix well. Now add soya sauce and mix again with light hand.
- Switch off the flame and add green part of the spring onion and mix with the rice. Mixed fried rice is ready to serve.
