- In a bowl mix olive oil, soy sauce, garlic and honey
- Season the chicken thighs with salt and pepper and add to the bowl then marinate for at least 4 hrs
- Preheat oven to 220 degrees celsius. Place chicken in a cast iron skillet/ baking tin. Skin side facing up. Add the chopped onions and carrot.
- Bake for 25 mins, turn and bake for another 15 mins. Turn again and finish cooking for 10 mins.
