Dum Aloo is named so because the dish is cooked under Dum or Pressure so as to let the potatoes soak in the flavor from gravy. These useful spices can be used to cook so many different meals! Whole baby potatoes cooked in a lusciously creamy and fresh cashew sauce is a family-friendly weeknight dinner.
Steps to make Baby Potatoes(DumAloo):
- Heat up oil and shallow fry those boiled baby potatoes by stirring continue..(boil potatoes untill one whistle)
- Take them out in a plate..
- Then in the same pan add cardamom,cinnamon stick,cloves and red dry whole chilli..saute them..
- Then add long cut onion and fry them until little brown in colour..then take them out in a plate and allow it to cool down..
- Make a fine paste out of it..(while making a paste add small piece of beetroot to get attractive colour)that is totally optional.
- Now add oil in the same pan..
- Add bay leaf and cashew nuts and saute them for few sec..
- Now add prepared paste which we have made out of onions..and fry them a little..
- Then add curd..while adding curd keep ur flame upon slow and stir continue..Cook for 2 mins.
- Now add fried baby potatoes and mix well.
- Add salt as per taste and garam masala mix well..cover with a lid and cook for 5 to 7 mins..
- Mix well again..and add half cup water to make gravy.and mix well.
- Now add kasuri methi and mix well..cook for 5 mins more on low flame..
- Add chopped coriander leaves and mix well..switch off the flame and serve hot with roti,paratha or naan..
