  2. Make ready 8 chicken thighs, skin on
  3. Make ready 22 clove garlic peeled
  4. Take 2 tbsp all-purpose flour
  5. Make ready 3/4 cup dry white wine (or stock)
  6. Prepare 1 cup chicken broth
  7. Get 3/4 tsp dried thyme
  8. Take 2 tbsp butter
  9. Prepare salt & pepper
Instructions to make Rustic Chicken with Garlic Gravy:
  1. Preheat oven to 400°F with rack in center of oven.
  2. In an oven safe dutch oven or skillet with a lid, heat oil over medium high heat. Dry chicken pieces with a paper towel.
  3. Season chicken pieces with salt & pepper. Cook until well browned for about 8 minutes. Remove to a plate.
  4. Reduce heat to medium, add garlic and cook stirring occasionally until starting to brown, about 3 minutes.
  5. Sprinkle flour over garlic and stir until combined. Return chicken and juices to skillet, cover and bake for 15 minutes.
  6. Remove from oven and put back on burner being careful not to burn yourself. Remove chicken back to the plate.
  7. Over medium high heat, whisk in the wine and simmer for 1 minute. Whisk in broth, thyme and salt & pepper if desired. Reduce heat and simmer stirring constantly until sauce thickens.
  8. Turn off heat and stir in butter. Add chicken back to sauce to rewarm.
  9. Serve over mashed potatoes, rice or pasta.
