  1. Get 300 g sausages
  2. Get Enough potatoes
  3. Take Tin cannellini beans
  4. Get 50 g Carrots celery and onions chopped - about (see tip)
  5. Make ready 1.5 litres hot stock
  6. Prepare Tablespoon passata sauce homemade or shop bought (see recipe)
  7. Prepare 2 bay leaves
  8. Prepare Salt and pepper to taste

  1. Chop sausages into bite size pieces. Peel and chop potatoes. Brown sausages in a pan, no oil needed, remove and set a side. In the same pan, add the soffritto mix, stirring to get any brown bits from the sausages too, extra flavour
  2. Now add stock, bay leaves and passata. Stir and add potatoes. Bring back to the boil and simmer for about 20-25 mins. Add sausages now and continue simmering for another 10 mins.
  3. Drain and rinse the beans and throw them in now. Season to taste and simmer for another 5 mins. Serve with fresh bread
