- Take 2 Green chillies

- Get 3 Bay leaves
- Make ready 1 cup Ghee / clarified butter
- Take 9 Onions large sized diced
- Make ready 6 Tomatoes Medium sized puréed
- Prepare as required Water
- Prepare 3/4 teaspoon Turmeric powder
- Get 2 teaspoons Red chilli powder
- Make ready 3 teaspoons Kashmiri red chilli powder
- Prepare 1 tablespoon Garam masala powder
- Prepare 1.5 tablespoon Ginger julienned
- Make ready as required Salt
- Get 2 tablespoons Coriander powder
- Get 1 glass Hot water for adjusting consistency
- Get some Cilantros finely chopped as preferred
- Make ready 1 sprig Curry leaves( optional)
Instructions to make Tari Wala Chicken:
- Make gashes on the cleaned, chicken legs. Add turmeric powder. Add salt. Add Kashmiri red chilli powder.
- Add green chilli sauce / paste. Add ginger garlic paste. Add lime juice.
- Rub the marinade masala over the chicken legs and marinate for 30 minutes minimum.
- Meantime, take diced onions a tablespoon cumin seeds, green chillies, little water in a blender and grind into a slightly coarse paste.
- Heat ghee in a wide wok.
- Add the whole spices, dried red chillies and roast slightly in low heat. Pour in the ground onion paste.
- Cook the onion paste in hot oil until they turn light brown. Keep stirring in between. Add half the salt at this stage while cooking the onion paste. Cook until onion gets dehydrated. Add the turmeric powder. Add the Kashmiri chilli powder. Adjust spice as per your taste.
- Add in chilli powder. Pour in the tomato purée. Now add julienned ginger pieces.
- Cook until masala firms and starts oozing oil. Now drop in the marinated chicken legs along with the marinade. Add the garam masala.
- Add coriander powder. Add little water if masala looks dry. Cover the wok and cook chicken in medium heat for 10 to 15 minutes or until chicken gets tenderly cooked. Do check with a fork to determine how well the chicken is cooked. Add hot water to adjust curry consistency if curry turns thick.
- Add in the chopped curry leaves and cilantros. Spicy TariWala Chicken is ready to serve.
