The ingredients needed to make mini quiches:
- Take 250 ml flour
- Make ready 1 ml salt
- Make ready 100 ml margarine

Instructions to make mini quiches:
- Sift dry ingredients together
- Grate margarine over the flour-mixture. Then use fingertips to rub the margarine into the mixture.
- Mix lemon juice and ice water together. Sprinkle over the flour mixture, then mix with a fork.
- Lightly press the dough together and place/wrap in a plastic bag. Put in fridge to cool.
- Once the dough is nice and cold, roll it to a thickness of about 2mm on a floured surface.
- Take pieces of the dough and press it into the form of a quich base (flat bottom, sides coming up) inside a greased muffin pan. Do not stretch the dough out. Then prick the bottom of the quich bases with a fork. Bake at a temp of 200ºC for 8-10 min.
- Let the bases cool.
- Once cooled, fill with favourite filling. Suggestion: mushrooms, cheese, bacon, spinach and egg, which is quick and easy to prepare in a pan while the bases cool. Or try a sweet option, eg. jam, chocolate mousse, meringue or thick custard.
I sprayed the bottom of the muffin tins with a little Pam and them placed the bread inside. I added an extra egg to the mixture, some chopped Canadian bacon. This mini quiche recipe is a go to favorite quiche recipe for breakfast, brunch, a light dinner, showers, and parties! Make ahead for easy entertaining or breakfast!
