- Prepare the chicken legs by making gashes so that marinade can soak in.
- To marinate the chicken, take the chicken in a large mixing bowl. Add in the curd and the ginger garlic paste.
- Add in red chilli powder, cumin powder, coriander powder, turmeric powder, crushed kasoori methi, salt, coarsely ground garam masala, lemon juice and mustard oil.
- Mix well until the chicken legs are well coated. Marinate for at least two hours, preferably overnight.
- Preheat the oven to 180 degrees celsius. Place the chicken legs on the baking rack. Make sure to use a dripping tray underneath. Baste with oil and grill at 180 degrees celsius for 20 minutes.
- Turn them over and baste with a bit of oil. Grill again for another 20 minutes or until cooked.
