Serve slightly warm or at room temperature. These definitely are just as the title states "Easy Mini Quiche". They were so easy to make and perfect little last minute appetizer. I used a biscuit cutter to trim the bread into circles.

Instructions to make Mini quiches:
  1. Preheat oven 160°c
  2. Add eggs and milk into mixing bowl and mix well
  3. Finely chop all vegetables and preferred meat and add to egg mix
  4. Add herbs, lemon juice and cheese and mix well.
  5. Spray muffin tray and pour egg mix into muffin tray evenly
  6. Turn oven up to 200°c
  7. Put muffin tray into oven for 30-40 minutes, making sure to keep checking as minutes go by
  8. When cooked all the way through take out of muffin tray and let rest for 10 minutes before serving and enjoy!

I sprayed the bottom of the muffin tins with a little Pam and them placed the bread inside. I added an extra egg to the mixture, some chopped Canadian bacon. This mini quiche recipe is a go to favorite quiche recipe for breakfast, brunch, a light dinner, showers, and parties! Make ahead for easy entertaining or breakfast!
