Gently reheat in the oven or microwave before serving. This is a delicious, savory vegetarian recipe with butternut squash and cheese. The original recipe called for Gruyere but I used sharp cheddar instead. I think both would work quite well.

Steps to make Quinoa au gratin:
  1. In a sauce pan add 2cups of water and add stock.cubes or prepare vegetable stock at home.For this heat water to this add 1 chopped carrot 1 chopped onion few garlic cloves 1 stick cinnamon 2 bay leaves few coriander stems crushed pepper and let it simmer for 10-15 mins. Strain it and then use
  2. Now add washed quinoa to this stock and let it cook on low flame for 15 mins till it becomes glossy
  3. Cover it and let it cool down
  4. Now in a bowl add cooked quinoa, broccoli, carrot, spring onion and capsicum
  5. Now add red chilli flakes mixed herbs and red pasta sauce.To make red pasta sauce. Heat 1 tsp olive oil in a sauce pan.To this add 1 tbsp chopped garlic and 1 finely chopped white onion..saute and add 1 cup.tomato.puree and 3 tbsp.tomato.sauce.also.add salt and pepper to taste. Add mixed herbs and chilli flakes to taste and cook on low flame for 15 mins
  6. Now add half cheese and mix these and spread this mixture in a baking dish
  7. Now mix bread crumbs and remaining cheese and.spread on quinoa mixture.Add almond flakes on top
  8. Now decorate with cherry tomatoes cut in halves.
  9. Bake in a.preheated oven.at 190 degree for.20.mins
  10. Serve hot
