- Get 1.5 cup Dedicated Coconut
- Take 3/4 cup Jaggery
- Make ready 1/4 cup Butter
- Take 1 tsp Baking Soda
- Get 1/4 cup Boiling water
Add jaggery and butter in a bowl and mix till it combine. Add dessicated coconut and oat flour to jaggery butter mixture. Add baking soda in boiling water mix and add to the oat flour mixture. Coconut and cardamom pairs well and in case you don't have cardamom powder do replace with vanilla extract.
Instructions to make Coconut Jaggery Cookies:
- Preheat Oven @180°C for 10 min.
- Melt butter and let it come to room temperature. Add jaggery and butter in a bowl and mix till it combine.
- Add dessicated coconut and oat flour to jaggery butter mixture. Mix properly.
- Add baking soda in boiling water mix and add to the oat flour mixture.
- Mix properly. Separate dough into balls and press slightly. Place it on greased baking tray.
- I kept it simple. You can dryfruits on top.
- Bake @180°C for 15 to 20min. Let it cool for sometime.

Keep the butter out from the refrigerator before start gathering the ingredients. Since the Jaggery I use is lumpy i mixed it with hot milk and kept aside to dissolve completely. Coconut flour along with jaggery makes these cookies more yum. Coconut oil — I suggest using good quality coconut oil. Because the aroma that jaggery and coconut together creates is outstanding.
