  1. Make ready 1 cup Basmati Rice
  2. Get 1 long carrot - Finely chopped
  3. Prepare 1-2 stalks celery - Finely chopped
  4. Prepare 1-2 spring onion (Scallions)- Finely chopped
  5. Get 1/2 cup green peas(fresh or frozen)
  6. Get 2 tbsp Soy sauce
  7. Prepare 1/4 tsp sugar
  8. Make ready 1/4 tsp pepper powder
  9. Make ready 1 tsp chopped garlic
  10. Get 2 tbsp any kind of vegetable oil
Instructions to make Quick Vegetable Fried Rice:
  1. Pour 2 cups of water in a pot .Bring it to boil ,then add 1 cup of basmati rice and chopped carrot pieces into it .You could also add green peas into it if it is not already cooked . I used frozen,so I didn't cook .Wait till rice and carrot becomes half cooked and add 1/4 tsp of salt . When everything is almost cooked turn off the heat and drain the water from it and keep it aside.
  2. In a pan pour 2 tbsp of refined oil .When it becomes hot ,add chopped garlic and saute a little bit .Add chopped veggies (celery , spring onion ,green peas) and saute it for another minute
  3. Add pepper powder , soy sauce , little bit sugar(a pinch) and mix everything well .
  4. Add the cooked rice, carrot mixture and mix well . Taste it and add salt if needed.
  5. You can also use other veggies like bell peppers here if you like.
  6. Serve hot with tomato sauce.
