Kadhi is basically a gravy prepared by sour curd and Besan ( Gram Flour). The pakodas are an added texture to the gravy and gives a nice taste to the palate. Instructions to make Punjabi kadi pakora with steamed rice:
- Firstly to prepare the pakora mix all the ingredients mentioned for pakoras and make a thick batter.
- Fry these in the form of round pakoras in hot mustard oil.
- Keep these aside.
- Now let’s prepare the kadi. Put mustard oil in a kadai and let it burn.
- Turn off the flame and add dry masala ingredients (fenugreek,coriander seeds, ajwain, asofodia, cumin,dried red chillies) and let them splutter.
- In a separate bowl add yoghurt, besan, salt,red chillie,turmeric powder,garam masala and blend it with a hand blender.
- Add this mixture into the kadai with 2 cups of water.
- Switch on the flame and keep stirring till a boil.
- Let it simmer and cook for around 1 hour. Keep stirring in between.
- Now time to add the pakoras.
- Let it boil for another 15-20minutes.
- Make a tarka in a pan with desi ghee and red chillies.
- Put tarka over the kadi.Also sprinkle some fresh coriander according to choice.
- Serve with steamed rice and chopped onions.
