- Cut up the onion, peppers, celery and garlic in some olive oil. Fry on a low heat until onion and peppers have softened. Add the spices and the dice tomato and stir in.
- Boil the water in a large pan, add the dry lentils, and keep a rolling boil going for 10 minutes
- When the 10min of the rolling boil is done, reduce the heat. Then add the potatoes, carrots, herbs and stock.
- Then add the contents of the frying pan and the red wine. Season with salt and pepper to taste. Allow to simmer for 15minutes before serving.
