- In a bowl, put ginger-garlic paste, red chilli powder, turmeric powder, cumin powder, coriander powder and salt followed by oil.
- Mix all the ingredients together to form a paste. Now put the baby corns in the bowl and mix with the paste for the masala to completely coat in. Refrigerate for about 15 minutes.
- Now coat the masala paste baby corn with the batter and deep fry them in some oil until golden brown and crisp.
- Serve hot with tomato sauce.
Fresh baby corn may have silks attached to the cobs, so you'll need to pull these silks away while rinsing them. If using frozen baby corn, thaw the corn before use and rinse away any remaining ice crystals. If using canned baby corn, drain the liquid and rinse the corn before use. But baby corn production doesn't gel with American agriculture practices. Some small farms grow baby corn in limited amounts (check your local farmers market!), but most big farms don't bother, according to Carol Miles, Washington State Professor of Vegetable Horticulture.
