- Add 2tbsp oil in a pan, once hot add the scotch bonnet, garlic & ginger, stir then place the fish, fry on both side until slightly crispy. Remove from pan, add in onions, tomatoes & fry.
- Add cabbage & season, add curry and place the fish. Add sliced onions & oyster sauce. Cover cook for 10minutes, turn the fish after 5minutes. - - To make the fries. - - Sprinkle salt and mix, place the potatoes in egg, the flour.
