- Peel, chop and par boil potatoes. They must be just under cooked, check with a fork before draining. Set a side to cool down. Wash and remove seeds from courgette. Dry well and chop
- Wash and chop up the pepper
- Wash and dry the salmon well, check for bones
- Add onions to pan and sweat them off. Add potatoes and cook for 3-4 mins to crisp up a bit. Add the rest of the veg
- Add salt, pepper and thyme. Cook for another 3-4 mins while you cook the salmon
- Add salmon skin side down to a hot pan. Leave it to cook for a few mins until golden underneath, lift up slightly to check. Add a bit of salt then turn over and cook the other side for about 2-3 mins. Don't over cook it.
