I have an irrational fear when it comes to sugar work, but after watching an episode of Come Dine With Me the contestant made… To make the cheesecake base, melt the butter in the microwave on short bursts on in a small pan over a medium heat. Blitz the biscuits in a food processor to a small crumb, add the melted butter, and pulse a few times until it is combined well. This no-bake Chocolate Honeycomb Cheesecake is packed with tiny morsels of crunchy honeycomb inside a velvety smooth cheesecake.

  1. Grease a 23cm tin and smash the biscuits in a bag. Melt the butter in a pan over a low heat, add the crumbs and stir. Remove from heat, place in tin and squash down. Set in the fridge for 1hr.
  2. Place cheese, sugar and extract in a bowl and mix.
  3. Whisk cream in a separate bowl until it creates soft peaks. Pour in the bags of Crunchie Nuggets and mix. Add the cheese mix and fold in.
