Instructions to make Chicken Pizza:
  1. Heat oil in saucepan over medium heat. Add onion and sauté until soft, about 5 minutes. Add garlic, oregano, salt, cumin and chilli powder. Stir and cook for 1 minute. Add tomatoes, can of tomatoes and stock pot along with 500ml water. Leave to simmer.
  2. Preheat oven to 180C. Heat 2 tsp oil in an oven proof frying pan over med-high heat. Add the chicken and brown on both sides. Sprinkle each side with the salt, black pepper and basil. Add in the tomato sauce.
  3. Sprinkle each piece of chicken with the cheese then top with pepperoni slices. Place in oven and cook until chicken is cooked all the way through, about 15-20 mins.
  4. For the salad, place pepper, cucumber, lettuce and salad leaves together in a bowl and mix. For the dressing, mix the olive oil, vinegar and mustard in a jug and whisk together.
  5. Take the “pizza” out of the oven and serve with salad.
