  6. Take out of oven after it is done and serve with your favorite sauce (example ketchup)

In southern India, these potatoes would be hot, hot, hot. I used a combination of Garam Masala, curry powder, garlic, ginger, whole grain mustard and olive oil for the seasoning mix. If you like spicy, try Tandoori Masala instead of the Garam Masala since it's made with chili peppers. This potato masala is much known as aloo masala in South India and is most commonly served with masala dosa as a filling.
