  6. Add broth to pan.
  7. Add chopped zucchini and carrots.
  8. Add pepper.
  9. Cover and allow to simmer on medium heat for 45 minutes to 1hour.
  10. Remove from heat, stir in parsley and mint.
  11. Salt to taste.
