- Wash cauliflower properly let the water drain properly. cut it into small florets. Finely cut cabbage and carrot.
- Heat oil, add mustard seeds and let it crackle. Now add fennel seeds. Add cauliflower and let it cook. Keep stirring mean while.
- After cauliflower cook partially, add cabbage and carrot as it will take less time compared to cauliflower. Add meshed potato and mix it well. Add salt to taste.
- Add turmeric powder, dhaniya powder, garam masala, red chilli powder and mix it. When all vegetables are cooked properly lastly mix chopped coriander leaves and mint leaves to it. And combine everything properly. Your stuffing is ready. Let it come to room temperature.
- Mix both the flour, add salt, carom seeds, ghee and mix it. Use required quantity of water to knead a dough. Dough should be neither too soft or hard.
- Roll out puries, cut into halves and give it a shape of samosa. Fill the stuffing and seal the top edges. Can use water to seal the sides. Prepare all the samosas in this way. Brush it with oil.
- Preheat the air fryer. Fry it at 200 degree temperature for 10-15 minutes.
- Serve it with tomato ketchup and/or green chutney.
