  1. Prepare 1 List
  2. Make ready 450-500 gm meat boneless
  3. Get 2 tbsp raw papaya paste (use meat tenderizer 1 tbsp if you don’t have papaya)

  5. Take 1/2 tbsp green chilli paste (if you like spice use 1 tbsp)

  10. Prepare 1/4 tsp star anise powder
  11. Make ready 1/4 cup yogurt
  12. Make ready 1/2 tbsp poppy seeds roasted and grind
  13. Prepare fried crushed onion 2 tbsp (use fresh that will give the perfect taste)
  14. Take 1 pinch yellow food colour
  15. Get 1/4 cup mustard oil (sarson ka tel)
  16. Make ready 2 tbsp white vinegar
Instructions to make Bihari Boti:
  1. Take boneless meat of goat or lamb. - try to make small cubes or fillets so that will easy to cook.
  2. Mix all list 1 ingredients in it. leave it for 2-3 hours.
  3. After that add all list 2 ingredients in it,mix well and marinate this now for 4-5 hours..or if you have time marinate it over night for best results.
  4. Just before cooking, add list 3 ingredients in it.. - You can cook them in pan or BBQ them or cook them in oven
  5. Preheat the oven on 175 C. thread the skewers with meat, keep them on a baking pan like shown in picture, because we want them to cook equally from every side.
  6. Now cook them in preheated oven for 40 minutes, - after 20 minutes turn the side so they will equally brown from each side. - at last 2-3 minutes brush them oil for moisture and shine…. don’t brush the oil in beginning because then all spices will fall down. at end give them coal smoke for nice BBQ flavor.
