Char kway teow (Chinese: 炒粿條; Pe̍h-ōe-jī: chhá-kóe-tiâu; pinyin: chǎo guǒ tiáo) is a popular noodle dish from Maritime Southeast Asia, notably in Indonesia, Malaysia, Singapore, and Brunei. In Hokkien, Char means "stir-fried" and kway teow refers to flat rice noodles. The dish is considered a national favourite in Malaysia and Singapore.

The ingredients needed to make Kwey teow:
  1. Take 1 kg fresh rice noodles
  2. Take 250 g thinly sliced chicken thigh/brest
  3. Take 100 g squid rings
  4. Prepare 50-100 g pealed prawns
  5. Prepare 2 Tbs sambal olek (Asian chilli paste)
  6. Take 3 Tbs light soy sauce
  7. Get 3-4 cloves garlic (chopped)
  8. Prepare 2 spring onion(finely sliced white seperated from green)
  9. Take 50 g bean sprouts
  10. Prepare 1/2 a lemon
  11. Make ready 1-2 tsp sesame oil
  12. Make ready 2 Tbs Chinese cooking wine
  13. Take 2 eggs beaten till frothy
  14. Get salt n pepper for eggs
  15. Take 2 Tbs olive oil
  16. Prepare 3-4 champignons sliced

A great serving of Char Kuey Teow is flavored not only with the freshest ingredients, but equally important is the elusive charred aroma from stir-frying the noodles over very high heat in a well-seasoned Chinese wok. Char Kuey Teow is now world famous. It was described as the classic traveling food cart on four wheels. Char Kway Teow (also sometimes spelled Char Kuey Teow) is a classic rice noodle dish from Malaysia, but it's also very popular in other Southeast Asian countries like Singapore and Indonesia.

Instructions to make Kwey teow:
  1. Heat oil in wok or deep saucepan add garlic, white part of spring onion and fry for 2 minutes.
  2. Add sambal olek fry for 2 minutes.
  3. Add chicken fry till just cooked
  4. Move chicken mix to 1 side of pan away from heat, add beaten eggs and scramble and season with salt and pepper till cooked then combine altogether with chicken mix.
  5. Add sliced mushrooms, stir fry for 1 minute
  6. Add squid and prawns stir in with mix till just cooked.
  7. Add rice noodles and stir till the noodles fully coated with mix
  8. Add soy sauce, sesame oil and Chinese cooking wine and stir for 1-2 minutes.
  9. Add green part of spring onion and bean sprouts stir for 1- 2 minutes​. And you're​ done.

A bit similar to Cantonese Chow Ho Fun Rice Noodles, Char Kway Teow is a hearty dish that's filled with meat, veggies, and chewy noodles. We have a few good Malaysian restaurants in the tri-state. Stir-fry the kway teow quickly and add seasoning and chili paste. Sprinkle with a little water and mix in all the fried ingredients together. This is a recipe for Singapore Char Kway Teow (炒粿條), a favourite local hawker delight.
