The ingredients needed to make Green Undhiyu:
  1. Take 2 tbsp green chilli paste
  2. Get 4 tbsp green garlic paste
  3. Prepare 2 cup finely chopped fresh coriander
  4. Prepare 2 tbsp lemon juice
  5. Prepare 1 tsp turmeric powder
  6. Prepare 1 tbsp dhaniya jeera powder(optional)

  8. Take 1 cup finely chopped fenugreek leaves
  9. Prepare 1 cup coarse wheat flour
  10. Make ready 2 tbsp gram flour
  11. Take 1 tbsp oil
  12. Take 1 tsp red chilli powder
  13. Get 1/2 tsp turmeric powder
  14. Prepare 1/2 tsp dhanya jeera powder
  15. Get 1 tsp sugar
  16. Take 1/4 tsp cooking soda
  17. Prepare to taste Salt
  18. Get For vegetable:
  19. Take 2 cups diced mixed vegetable (potato, cauliflower, brinjal, yam, elephant's foot etc.)
  20. Make ready 2 cups mixed fresh green seeds (peas, tuver dana, broad beans seeds,)
  21. Take 1 cup broad beans (preferably surti papdi)
  22. Prepare For garnishing:
  23. Take 1/4 cup finely chopped coriander
Steps to make Green Undhiyu:
  1. Mix both flours, sugar, salt, oil and dry spices.
  2. Now put cooking soda on methi leaves and add lemon juice over it, bubbling occurs, mix it well with methi leaves and then mix it in the flour mix. Knead medium hard dough with a light hand, add little water if needed.
  3. Grease your palm with oil and made small dumplings. Deep fry it and remove it on an absorbent paper-lined plate.
  4. In a broad bottom pan heat oil,add both paste and coriander, saute for while & add cooking,mix well and add all green seeds. Cook for few minutes.
  5. Now add 1 cup of water, once it start boiling add broad beans, turn heat on simmer and let it cook for 2-3 minutes.
  6. Then check all vegetables are cooked or not, if needed add little water.
  7. Once cooked add turmeric powder, dhanya, jeera powder and lemon juice. Mix well with light hand, cook for 2-3 minutes more, then turn off heat.
  8. Then add potatoes, yam and elephant's foot dices, mix well and cook for 2-4 minutes more.
  9. Add brinjal and cook for 2-3 minutes. Lastly, add cauliflower florets, add salt,mix well and cook for 4 minutes more.
  10. At the time of serving,add muthiya, garnish with coriander and serve hot.
