The ingredients needed to make Boerie Quiche:
- Take 1 x frozen Puff pastry
- Get Boerie of your choice (1 tray)
- Get 2 x tomatoes Diced
- Get 1 x onion (chopped)
- Get Curry Power
- Prepare 5 x eggs
- Prepare Cheddar cheese (100g)
- Get Gouda cheese (100g)
- Get Dry Italian herbs
- Prepare Oil
- Take Round baking dish (15-20cm)
- Get 3 tbs mayonnaise
Steps to make Boerie Quiche:
- Boil Boerie until cooked then set aside.
- Sautee onions, curry and herbs. Add tomatoes and cook on low heat
- Chop cooked Boerie and add to the pan. Add remaining spices and allow to simmer and reduce liquid.
- In a bowl, beat 4 eggs and fold I in mayo and spices and grated cheese
- Grease your baking dish and line with thawed Puff pastry. (you can cut away any extra pastry or fold it inward over the dish)
- Add meat mixture to pastry then top with egg mixture
- Beat the last egg and use it to brush over top of pastry and any exposed edges. Then bake on 150 degrees for 45 minutes
- Allow to sit for 5 minutes before cutting. Serve with a salad or roast veggies.
