The Emmer name is their beginning: an ancient, organic heritage grain wheat, which is blended with rye and good Italian flour. These hand-selected grains are lower in gluten, and higher in nutrients like antioxidants, vitamins and minerals. Emmer doesn't use them because they sound good, or just because they are good for you, they are. All-purpose einkorn flour looks and tastes similar to white flour, so it's the perfect flour (in my opinion) to use when making pizza dough.

Steps to make Wheat free Pizza (emmer flour (Zea)):
  1. Preheat oven to 180oC
  2. Mix in a bowl the flour, yeast and salt.
  3. Add the lukewarm water slowly while mixing with your hands. Emmer flour needs less water than wheat flour. If you feel that more water or flour is needed, then add either ingredient accordingly. At the end add the extra virgin olive oil while kneading the formed dough.
  4. Cover the bowl with two tea towels and leave the dough to rest for 1 hour.
  5. In the meantime you can grill the prosciutto slices and asparagus. It will look nice on the pizza if the asparagus tips and prosciutto are cut in slices and are shredded respectively.
  6. Once the dough is ready you can give it a round shape and flatten it with your fingers on a baking tray leaving a thicker border.
  7. Spinkle the shredded prosciutto, the asparagus slices and finally the crumbled feta cheese. Drizzle with the two tablespoons of extra virgin olive oil.
  8. Bake the pizza for 15 minutes until the crust is slightly brown.
  9. Bon appetite !!!

Einkorn is sold in some health food stores and online. Einkorn does act a bit different than whole wheat when it's used in baked recipes, so it does take some time to get used to this flour. The Pro doesn't require calibration, and the original Mockmill has easy-to-follow calibration instructions. I find that milling into a mixing bowl is just as easy as scooping flour out of a bag or bin, and when a recipe calls for sifting flour, milling into the mixing bowl is effortless. The Emmer flour is wonderful in denser baked goods such as coffee cakes, brownies or as an additive to breads.
