A simple dish of rice flour cooked with spices. At home, we make this rice flour khichu for dinner or at times for quick evening snack. Always pour some oil on top of the khichu and then top it with koro sambhar. Khichu can be prepared from various types of flours like rice flour, wheat flour, bajri flour, nachani flour, jowar flour etc.

Instructions to make Khichu in traditional style:
  1. Take Rice flour in a pot. Keep aside.  Boil water. Take out a little water and keep aside to add if required.  Add jeera and ajwain, salt and karo. When boils,   Add green chillies paste. When it starts to boil, pour it in the rice flour.
  2. Mix well with a rolling pin to remove lumps. The mixture should have matho(shikhand) or whipped cream type of loose lumpy texture.
  3. Boil water in a steaming pot.  take a greased steam plate and put in the pot. Put flour mixture in it and steam until cooked.
  4. Take it out in a serving plate, pour some peanut oil and sprinkle some achar masala over it. Serve hot with achar masala and peanut oil.

Always pour some oil on top of the khichu and then top it with koro sambhar.
