  1. Take 500 g sweet potatoes, peeled and halved lenghtways
  2. Prepare 5/8 cup flour, self raising
  3. Take 2 eggs, lightly beaten

  5. Make ready 1 1/2 cup corn kernels, canned and drained
  6. Take 5/16 cup bunch of coriander, roughly chopped
  7. Make ready olive oil
  8. Prepare 5/16 yogurt, to serve

Wash the potatoes and spring onions, open the cans of sweetcorn and drain. Squeeze the excess moisture from the grated potato and put the potato into a large bowl. Peel and top and tail the spring onion, finely slice and add to the large bowl. Sprinkle each potato fritter with the grated cheese and place under a preheated moderately-hot broiler, until golden brown.

Steps to make Corn and Sweet Potato Fritters:
  1. In a saucepan boil the sweet potato until half done (they should be soft but not completely done). Remove from saucepan, let cool for 10 minutes and coarsely grate the potatoes.
  2. In a bowl, beat together the eggs and the buttermilk; add the flour and mix until well blended.
  3. Add corn and coriander, flavor with salt and pepper then add in the grated sweet potato. Mix well.
  4. To make the fritters, heat olive oil in a non-stick pan over moderate flame. Once oil is hot, use 2 tablespoon of potatoes mixture for every fritter to be made, place the mixture (2 tablespoon) into the pan and spread to make a circle. Fry until light brown and firm (about 2 minutes on each side). Repeat for the entire mixture.
  5. Remove from heat; serve each fritter topped with a tablespoon of yoghurt.

Transfer the fritters to warmed plates and top with the eggs and sliced tomatoes. Garnish with parsley and serve at once. Mix the potato and sweetcorn together and add the the oregano, beaten egg, onion mix and seasoning if desired. Heat the remaining oil in a frying pan or skillet. Divide the mixture into two and place into the hot pan to make two oval shaped cakes.
