Steps to make Veg Kolhapuri:
- Dry roast all the ingredients mentioned under masala section over low heat for 2 minutes, allow to cool completely and grind to fine powder keep it aside
- Boil vegetables with little salt in 2 cups of water for 10 minutes or until they are almost cooked, keep it aside
- Heat oil in a pan add onions and stir fry until translucent
- Add ginger garlic paste and stir until raw Aroma goes away
- Add tomatoes and cook until Tomatoes are tender and mushy
- Add capsicum /bell peppers and lightly saute
- Add turmeric and prepared ground masala with salt. mix well,cook until oil starts leaving the sides
- Drain excess water from veggies. Keep water aside. Add the veggies to pan. Mix well
- Add water and coriander leaves. Adjust water required as per gravy consistency
- Cover and simmer for 15 minutes
- Garnish with coriander leaves. Serve hot
