  1. Wash and boil your sweet potatoes,drain water,skin and let them cool a little
  2. Mash your sweet potatoes,add flour and baking powder and cinammon,(I used cinammon)
  3. If it's still sticky add more flour until it's a nice firm yet soft dough,
  4. Cut or pinch into medium sized balls,
  5. Heat your frying oil until it's medium high hot,test with one ball
  6. If your oil is okay deep fry,
  7. You'll know they're ready once they float, fry to your colour liking I like mine just a little bit browned
  8. Serve with tea or coffee

Stir in the brown sugar, orange juice, zest and nutmeg. In a separate bowl, toss the coconut with the sugar and cinnamon. Gently drop a few sweet potato balls into the hot oil. Sweet potato balls should float when cooked. Remove with tongs and drain on a metal strainer.
