We have to be honest, we looked through it several times and love the layout with many bright and beautiful photographs, all of the meals look tantalizing. The Paleo diet emphasizes eating foods in their most natural form, particularly animal proteins, fruits and vegetables, and nuts and seeds. For the sauce, mix the cornstarch, orange rind, orange juice and honey in a small saucepan.

  2. Place a big size ring cutter in a pan. Spread some coconut oil. Add 1/3rd of the pancakes mixture in the ring, spread in the ring & press slightly.
  3. Add coconut oil on the sides. Cover and let the pancake cook on one side. Then remove the ring cutter. Flip the pancake, cover the pan and let the other side of pancake cook as well. Remove from the pan.
  4. Coat 1 cup sweet potato slices with 1/2 tbsp red chilli powder and salt as per taste. Heat 1 tbsp coconut oil in the pan. Place the slices and roast from both the sides till they turn brown.
  5. To make the sauce, blend 1 cup oranges and 1 cup chopped tomatoes in a mixer jar. Heat a pan. Add the blended mixture to the pan. Then add 1 cup water and allow the tomatoes to cook. Once the sauce thickens, add 1 tbsp red chilli flakes, salt as per taste, 1 tbsp fennel seeds, 1 tbsp honey and mix well. Let it remain on low flame for about 2-3 minutes. Then remove from flame and let the sauce cool.
  6. Serve hot pancakes with the roasted sweet potato slices and orange-tomato sauce.

Bring the mixture to a boil over medium heat, stirring constantly until thickened. Remove from heat and stir in the butter until melted. Add orange sections to the sauce just before serving. For the pancakes, combine the flour, baking powder and orange rind. Paleo tomato sauce is a healthy and easy to make "spaghetti" sauce.
