Pour the cream cheese mixture over the crust and spread evenly. Remove the pan from the oven and let cool on a wire rack before cutting into squares. These bars need to be stored in the refrigerator, but are best served warm. Traditional sopapillas are drizzled with honey at the table, but the bars have plenty of sweet bite built right in. In a small bowl, beat the cream cheese, sugar and remaining eggs until smooth.
