In a large mixing bowl, stir together the panko and milk until combined. Add the ground beef, ground pork, garlic, eggs, Parmesan, fresh herbs, onion and Worcestershire sauce to the mixing bowl. Instructions to make Meatballs:
  1. Preheat oven to 400°. In a small bowl, soak italian bread in milk for approx. 20 minutes. Remove bread and squeeze to get excess milk out, reserving the milk. Place bread in large bowl to be mixed with other ingredients.
  2. Whisk together reserved milk and eggs, in small bowl.
  3. In the large bowl containing bread from step 1, add ground meat, onion, garlic, dry ingredients, and whisked eggs. Combine all ingredients. I use my hands to prevent overworking the meatballs which can cause a mealy texture.
  4. Using a scooper for consistent size, separate and roll meat mixture into individual meatballs. Place on shallow baking sheets.
  5. Cook meatballs for about 30 minutes, for regular sized, or 15 minutes for mini-meatballs. This should yield approximately 48 regular sized meatballs.
  6. Meatballs can be frozen after cooling.

These plant-based meatballs with spinach, nutritional yeast, and vegan bread crumbs deliver lots of flavor. We like more of a crunchy, dry meatball so these are baked in the oven without sauce but they can be simmered on the stovetop in marinara sauce, as well. Coat a large saute pan with olive oil, add the onions and bring to a medium-high heat. Remove and turn meatballs if browned already on bottom (use a thin metal spatula to scrape from baking sheet if needed). To brown the meatballs, heat olive oil in a heavy pot or large skillet over medium-high heat.
