- Heat up the oil in a wok or large frying pan. Add the onion and garlic and and gently fry.
- Meanwhile prepare your veggies. And mash up the anchovies.
- Once the onion mixture has softened add the tomato purée and anchovies and stir.
- Pour in the rice, you may need to add a drizzle of oil to prevent it from sticking.
- Break up the lumps and coat really well with the tomato, onion and anchovy mixture.
- Add the soy sauce, kecap manis, fish sauce and stir well.
- Add the diced chilli 🌶 (optional of course). Stir again.
- Throw in the prawns and stir well. Turn down the heat low so it doesn’t burn.
- In a small frying pan heat it add the oil and fry the egg!
- That’s it your ready to serve! Garnish with cucumber and tomato, extra chilli and spring onions. I added my favourite original sriracha sauce from Sriracha! Enjoy x
