Instructions to make Medu vada with coconut chutney:
- Take urad dal into a bowl and wash 3-4times with water. Soak dal in enough water for 2-3hrs. Drain all the water from the dal. Soak dal blend it coarse paste. Transfer the mixture into a bowl and beat it good. Until it becomes fluffy. Add all ingredients.
- Take spoonful mixture and give it round shape on a flat Surface and help of water with the fingers make it hole as per photo. Transfer it heat oil in a kadai. First keep flame high in a kadai to avoid oil soaking. Then reduce flame.
- Fry until brown. Turn off flame. Remove vada and keep on tissue paper.
- FOR CHUTNEY, in a mixture jar put every ingredients for chutney except oil, lemon juice & mustard seeds. Blend smooth paste now add lemon juice. Mix thoroughly. Heat 1tsp oil put mustard seeds start crackling pour on chutney. Mix it and serve with medu vada
